I usually bring this to parties with the salsa. It’s pretty expected that they appear together these days, but if it were up to me I’d make the Guac and stop right there. It’s my fav.
4 ripe avocados
2 T finely chopped white onion
1 plum tomato
2 cloves garlic (real garlic, please)
Cut the avocados by using your big ol’ kitchen knife and making a circle in the skin from the pit to the top and back. Twist the two sides and use your big ol’ knife to grab the pit and pull it out. Please do not use your bare hand to pull the pit off of the knife. Use a kitchen towel and save yourself the stitches. Scoop out the avocado with an ice cream scoop and mash it with fork. Finely chop the tomato, onion and jalepeno. Dump in. Sprinkle with salt, squeeze the juice from one lime and stir. This stuff is heaven on a chip.
