My mom has been making this cold salad for years. This is Jeff’s favorite. He’ll do a little “woo hoo” whenever he hears it’s going to make an appearance.
English Pea Salad
1 bag frozen petite peas, cooked and chilled
1/2 cup red onion, finely chopped
8 oz. cheddar cheese, grated
4 hardboiled eggs, chopped
mayo (I prefer light)
salt and pepper to taste
Cook the frozen peas and chill them for at least an hour in the fridge. Combine all ingredients and chill until ready to serve.
