When I say “salad” please do not mistake that for the lump of iceberg lettuce that many restaurants are STILL giving and charging $3 for. If you are still one of those hanging onto your iceberg salad, please do your health a favor and STOP. Eat some real salad greens. I highly recommend the Spring Mix. Although. if you’d like to go all out, go straight for arugula.
I really like to have big salads. But, I get easily bored with the typical greens, tomato, cucumber, carrot and ranch salad. Here are some that I have to keep things interesting:
toasted chopped walnuts
raspberry walnut dressing (Ken’s is good)
finely chopped romaine or green leaf lettuce
jack cheese (I prefer pepper jack)
red bell peppers
black bean and mexicorn relish (mix with a little oil, cumin and cayenne)
cooked, seasoned chicken (with taco seasoning)
spicy ranch (mix ranch with Cholula hot sauce and salsa)
crumbled tortilla chips
spicy pecans (boil pecans, drain, toss in sugar, cinnamon, 5 spice powder and cayenne (to taste) and toast in oven on greased parchment paper for about 25 minutes)
toss with lemon juice, olive oil and a little kosher salt
*Simple but OH SO delicious. It is my very favorite. Take the time to make the pecans and you won’t be sorry.
Crunchy Oriental Salad:
broccoli cole slaw mix (found near bags of chopped broccoli florets)
cucumber (peeled is best for this)
chow mein noodles
ginger dressing (Makato is the best–found in the produce section in my grocery store, not with regular dressings)
