My brother Jason is an excellent chef working at one of the finest restaurants in NYC – Picholine
Before he was a big, fancy chef, he used to cook for us all the time. I think he may have come up with the Jason Green Beans before he went to Le Cordon Bleu in Atlanta.
These are my favorite green beans and they’re so easy to prepare. I hope you enjoy!
1 onion, coarsely chopped
1 1/2 cups baby bella mushrooms, chopped
3 cups hericots verts (or any other variety of green bean that you can get ahold of–even frozen ones work nicely)
kosher salt (to taste)
2 tbsp. olive oil
1 tbsp. butter
Coat skillet with olive oil and add butter. Heat over medium high until butter is melted. Add onions and kosher salt and cook until translucent. Add mushrooms and cook until onions and mushrooms are beginning to brown. Add green beans and continue cooking until green beans are slightly soft. Do not over cook. If the green beans start to lose their green or they get limp and mushy, you’ve gone too far.
