I LOVE this vegetable soup recipe. I get lotsa compliments on it whenever I serve it to a group. It makes enough for about 6-8.
1 lb ground chicken
1 onion, coarsely chopped
1 clove garlic
1 can sliced carrots
1 can green beans
1 can shoepeg corn
1 can black beans
1 can great northern beans
1 can diced tomato, undrained
1 can Rotel, undrained
1 can tomato soup (low sodium)
dash of lemon juice
1 chicken bullion cube
salt and pepper to taste
Brown the ground chicken in a large pot, then drain. Cook onion and garlic in the same pan until soft. Add chicken back to pot. Open all the cans and add them to the pot. Add lemon juice and bullion cube. Bring to a boil, then reduce heat to simmer for about 20 minutes. Serve with homemade stone ground cornbread. YUM!
